Banana Fritters

In a deep mixing bowl, stir the flour and sugar together.
Beat the eggs one at a time.
Using a whisk add milk to eggs beating constantly.
Beat batter until it is smooth and elastic.
Mash bananas to a smooth purée.
Stir the banana purée into the batter and let the mixture rest at room temperature for 30 minutes.
Heat oil in a pan to 375°.
Drop about 1/4 cup of batter into oil and fry on each side until golden brown.
Sprinkle with confectioners sugar.
