Banana Cream Pie
Banana Cream Pie is an moderately easy dinner. Made with 1/2 c. evaporated skim milk, 3 eggs, dash of salt, 3/4 tsp. vanilla and 1 1/4 c. fresh skim milk, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Beat eggs with salt and evaporated milk until well mixed.
Add fresh milk and sugar substitute.
Cook in top of double boiler until mixture is consistency of soft custard.
Add vanilla; mix well and remove from heat.
Toss sliced bananas with lemon juice and arrange in bottom of 9-inch graham cracker crust, reserving several slices for garnish.
Pour custard mix over the bananas. Arrange reserved slices on top and chill until well set.
