Banana Carrot Bread
Banana Carrot Bread is an moderately easy dinner. Made with 1 c. mashed bananas, 1 c. sugar, 3/4 c. salad oil, 2 eggs and 2 c. sifted all-purpose flour, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Combine bananas, sugar, oil and eggs in large bowl.
Beat with electric mixer 2 minutes (or 300 strokes by hand).
Sift together flour, soda, salt and cinnamon.
Fold into banana mixture.
Stir in carrots and nuts.
Stir into greased and floured 9 x 5 x 2 1/2-inch pan.
Bake at 350Β° for 55 to 60 minutes.
Cool in pan 10 minutes.
Remove from pan and cool on rack.
Wrap and store overnight before cutting.
May substitute zucchini for carrots.
