Banana Cake
Banana Cake is an moderately easy dinner. Made with 2/3 c. shortening, 2 1/2 c. sifted cake flour, 1 2/3 c. sugar, 1 1/4 tsp. baking powder and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Cream shortening; sift in dry ingredients.
Add bananas and half the buttermilk; mix until flour is dampened.
Then beat with mixer on high speed for 2 minutes.
Add remaining buttermilk and eggs; beat 2 minutes more.
Fold in nuts.
Bake in greased 9-inch pans at 350Β° for 35 minutes.
Cool in pans 10 minutes.
Remove and cool.
Spread one layer with 1/3 cup of Cocoa Whipped Cream and top with banana slices.
Add second layer; frost tops and sides with remainder of whipped topping.
