Banana Bread
Banana Bread is an moderately easy dinner. Made with generous 3/4 c. mashed banana, 1/3 c. vegetable oil, 4 egg whites or 2 extra large eggs, 1/2 c. water and 2 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Preheat oven to 325Β°.
Coat a 9 x 5 x 2 1/4-inch loaf pan with vegetable oil or vegetable shortening.
In large bowl, using a hand mixer, whip together banana, oil, eggs and water.
Add flour, cinnamon, nutmeg and nuts (if desired) to banana mixture and mix. Stir in baking soda and baking powder quickly and then mix.
