Baked Stuffed Tomatoes
Baked Stuffed Tomatoes is an easy dinner. Made with 6 medium tomatoes, 1/2 small green pepper, finely chopped (about 1/4 c.), 1/4 c. grated parmesan cheese, 1/3 c. croutons and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Remove stem ends from tomatoes; cut thin slice from bottom of each tomato to prevent tipping.
Remove pulp from each tomato, leaving a 1/2-inch wall; chop enough pulp to make 1/3 cup.
Mix tomato pulp, green pepper, cheese, croutons and salt.
Fill tomatoes.
Place in ungreased oblong baking dish.
Cook uncovered in 350Β° oven for about 20 minutes or until tomatoes are heated through.
Garnish with parsley sprigs or crumbled, crisply fried bacon, if desired.
