Baked Stew
Baked Stew is an moderately easy dinner. Made with 4 to 6 potatoes, cut in eighths or smaller, 6 to 8 carrots, cut thin and about 1-inch long, 4 onions, cut in eighths, 2 stalks celery, sliced and 1/8 to 1/4 c. oil, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Place vegetables in a large casserole and pour oil over them. Bake 45 minutes in a 400° oven.
Stir 3 to 4 times to keep vegetables coated with oil.
During this time put mushroom soup in a pan; dilute with juice from dinner cuts and 1/2 cup water.
Cut dinner cuts in 1-inch cubes and add to vegetable mixture.
Stir well and bake at 325° for 1 hour or until vegetables are done. Salt may be added as desired.
