Place spareribs in roasting pan with cover.
Bake, uncovered, in hot oven (400°) for 30 minutes.
Remove ribs.
Pour off some of fat.
Put 1 quart sauerkraut in pan; arrange ribs on top and season with salt and pepper.
Pour on 1 cup hot water; cover and bake at 350° for 1 hour.
Makes 6 servings.
