Baked Mushroom Rice
Baked Mushroom Rice is an moderately easy dinner. Made with 1 c. uncooked rice, 1/2 c. sliced green onions, with tops, 1 tbsp. butter or oleo, 1 (2-1/2 oz.) can sliced mushrooms with liquid and 1/4 c. chopped pimentos, this recipe delivers authentic, satisfying flavors. Sprinkle rice in a buttered baking dish.
In skillet, saute onions in butter until soft.
Add remaining ingredients.
Bring to boil.
Pour this mixture over rice in baking dish; stir.
Cover with a tight fitting lid or foil.
Bake at 375 degrees for 25 to 30 minutes or until rice is tender and liquid is absorbed.
Fluff lightly with fork.
