Baked Mexican Rice
Baked Mexican Rice is an impressive Mexican dinner you can prepare in just 54 minutes. Made with onion, finely chopped, garlic, chopped, c. olive oil, c. rice and . salt, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
In heavy casserole, saute onion and garlic in olive oil (or spray casserole with Pam) until just soft. Add rice, salt, pepper and chili powder.
Brown slightly. Add mushrooms, chorizo and boiling stock (enough to come 1-inch above rice). Cover with a tight lid and bake at 350Β° for 30 to 35 minutes or until liquid is completely absorbed.
Sprinkle with cheese.
