Lightly flour a pastry cloth or a piece of wax paper.
Place bread dough on cloth; sprinkle lightly with flour.
Roll out dough to a 10 x 14-inch rectangle.
Spread mustard lengthwise down center 1/3 of dough.
Top with ham, then cheese and spinach.
Make cuts in dough from filling to dough edges at 1 inch intervals along sides of filling.
Alternating sides, fold cup strips at a slight angle over top of filling to cover.
Carefully transfer filled dough loaf to a greased baking sheet.
Let rise for 15 to 20 minutes.
Brush loaf with egg white.
Bake at 375Β° for 20 to 25 minutes.
