Baked Fish
Baked Fish is an moderately easy dinner. Made with 1/2 c. liquid margarine, juice of 2 limes, salt and pepper to taste, pressed garlic to taste and 3 lb. skinned fish fillets (orange roughy), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Preheat oven to 400Β°.
Beat margarine, lime juice, salt, pepper and garlic until smooth.
Spread liberally on both sides of fillets; marinate for 1 hour in a Pyrex baking dish.
Sprinkle with Parmesan cheese and crushed onions.
Bake for 15 minutes, or until just done, depending on thickness of fish.
Serves 6 to 8.
