Baked Eggplant
Baked Eggplant is an moderately easy dinner. Made with 2 large eggplant, sliced, 2 c. tomato juice or spaghetti sauce, 3 tbsp. grated parmesan cheese, 1 green pepper, cut up in strips and salt, pepper and minced garlic, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
In 9 x 13-inch baking dish, alternate layers of tomato juice, sliced eggplant (which have been sprinkled with salt and pepper), garlic and parsley.
Top all with cheese and strips of green pepper.
Cover with foil, slash the top of foil.
Bake at 350Β° for 45 minutes.
