Baked Corn
Baked Corn is an moderately easy dinner. Made with 1/4 c. diced mango pepper, 2 tbsp. shortening, 1/2 c. condensed milk, 1 1/2 c. whole kernel corn, drained and liquid reserved and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Fry mango in shortening. Add milk, 1/2 cup corn liquid, seasonings and cheese.
Heat until cheese melts. Add slightly beaten egg yolks, bread cubes and corn. Beat egg whites stiff. Fold in.
Pour into greased 1 1/2-quart baking dish. Bake at 350Β° for 45 minutes or until firm in center. Serves 8.
