Aunt Laura's Zucchini Pickles
Aunt Laura'S Zucchini Pickles is an moderately easy dinner. Made with 1 gal. peeled zucchini, cut in 3 x 1-inch cubes, 2 gal. cold water, 2 c. dehydrated lime, 1 qt. cider vinegar and 9 c. sugar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Soak zucchini in 2 gallons cold water and lime.
Drain and wash at least 6 to 7 times to remove all trace of lime.
This is important.
Let sit in cold water 3 hours, then drain.
Mix sugar, spices and 1 quart cider vinegar to zucchini.
This will be watery on top and not mix well.
Let stand overnight.
Simmer 30 minutes and seal in sterilized jars.
