Aunt Irene's Courtland Stew
Aunt Irene'S Courtland Stew is an moderately easy dinner. Made with 1 hen, 4 (1 lb.) cans tomatoes, 1 tbsp. salt, 1/4 tsp. red pepper and 1 can tomato paste, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Boil hen in small amount of salted water.
Remove meat from bone and return to stock.
Add whole potatoes and when done, remove and mash.
Add remaining ingredients, except corn, at the same time as potatoes.
Add corn after stew is nearly done. Cooking time is about 5 hours.
Can be modified for crock-pot.
