Aunt Fanny's Baked Squash
Aunt Fanny'S Baked Squash is an moderately easy dinner. Made with 3 lb. yellow summer squash, 1/2 c. chopped onions, 1/2 c. cracker meal or bread crumbs, 1/2 tsp. black pepper and 2 eggs, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Wash and cut up squash.
Boil until tender; drain thoroughly, then mash.
Add all ingredients except 1/2 of butter to squash. Melt remaining butter.
Pour mixture in baking dish, then spread melted butter over top and sprinkle with cracker meal or bread crumbs.
Bake in 375Β° oven for approximately one hour or until brown on top.
