Aunt Emma's Hot German Potato Salad
Aunt Emma'S Hot German Potato Salad is an moderately easy dinner. Made with 6 medium potatoes, sliced, 1/2 c. onions, finely chopped, 1/2 c. celery, chopped, 1 c. sweet relish or salad cutlets and 1 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. In a covered pan, cook potatoes until tender.
Drain well.
In mixing bowl, mash potatoes with old fashioned masher.
Sprinkle potatoes with sugar and vinegar.
Add celery, onions, sweet relish, salt and parsley flakes to the potatoes.
Stir the mixture to combine with potatoes.
Add mayonnaise or dressing in potato mixture.
Carefully fold in 2 of the boiled eggs after cutting them into medium size pieces.
Slice the other 2 eggs into 1/2-inch slices and place over finished prepared salad.
Sprinkle paprika over top and serve warm.
