Aunt Bill's Microwave Candy
Aunt Bill'S Microwave Candy is an moderately easy dinner. Made with 2 c. sugar, 1 c. buttermilk, 1 tsp. vanilla, 1 tsp. baking soda and 3/4 c. butter or oleo, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Combine sugar, soda, buttermilk and butter.
Cover with plastic wrap; punch holes in wrap.
Microwave on High for 2 1/2 minutes. Stir and turn dish.
Continue cooking for 15 minutes, stirring every 5 minutes.
Return to oven for 2 minutes or until soft ball forms in cold water or it shows 236Β° on a candy thermometer.
(Do not put candy thermometer in microwave.)
Add vanilla and beat with electric mixer until soft peaks form.
Watch closely.
Stir in pecans and spread in a buttered dish (12 x 7-inch).
Cool; cut into pieces.
