Artichoke Soufflé
Artichoke Soufflé is an moderately easy dinner. Made with 2 (8 1/2 oz.) cans artichoke hearts, drained (i prefer progresso brand), 1 c. parmesan cheese, grated, 1 c. mayonnaise (hellmann's), 1/2 tsp. parsley flakes and 1 tsp. chopped pimento, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

In food processor pulse cheese.
Add artichoke hearts and pulse until chopped well.
Add mayonnaise, parsley flakes, pimento and garlic salt.
Pulse until mixed.
(One or two pulses.)
Keep the ingredients thick and creamy.
Preheat oven to 350°.
Put mixture into a greased 1 1/2-quart casserole dish.
Bake 25 minutes.
Serve with Garlic Bagel Toast or Melba Rounds.
This makes a nice chafing dish appetizer for parties.
