Artichoke Rice Medley
Artichoke Rice Medley is an moderately easy dinner. Made with 1 (8 oz.) box chicken flavor rice-a-roni, 2 (6 oz.) jars marinated artichoke hearts, 1/4 c. pimento stuffed olives, 2 large scallions, sliced and 1 (8 oz.) can water chestnuts, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cook rice according to package directions, using 2 1/2 cups water.
Remove to large bowl.
Drain artichoke hearts, reserving marinade.
Chop coarsely the hearts, olives and drained and rinsed water chestnuts; add to rice.
In a small bowl, mix reserved marinade, mayonnaise, curry powder, salt and pepper; stir into warm rice.
Serve warm or chilled.
