Apricot Salad
Apricot Salad is an moderately easy dinner. Made with 1 large box or 2 small jell-o (apricot), 1/2 c. sugar, 2 c. boiling water, 3 oz. cream cheese, diced and 1 can crushed pineapple plus juice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Dissolve Jell-O and sugar in boiling water.
Add cream cheese. Add pineapple and juice, chopped nuts and chopped celery.
Fold in Cool Whip.
Put in 9 x 12-inch pan and refrigerate.
