Apricot Chicken
Apricot Chicken is an moderately easy dinner. Made with 1 (10 oz.) jar apricot preserves, 1/4 c. lemon juice, 2 tsp. soy sauce, 1/2 tsp. salt and 2 to 3 chicken breasts, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 350Β°. In shallow dish, combine preserves, lemon juice, soy sauce and salt. Coat chicken with mixture.
Roll chicken in bread crumbs. Reserve remaining apricot mixture. Arrange chicken in 13 x 9-inch baking dish and drizzle with melted margarine. Bake, uncovered, 45 minutes or until tender. In small saucepan, simmer remaining apricot mixture 5 to 10 minutes. Pour over chicken before serving.
