Apricot Chicken
Apricot Chicken is an moderately easy dinner. Made with 4 chicken breasts (3 oz. each), 2 c. sliced mushrooms, 1 onion, chopped, 1 c. low-sodium chicken broth and 12 dried apricot halves, julienned, this recipe delivers authentic, satisfying flavors. Spray pan with cooking spray and brown chicken for 2 minutes on each side; remove from skillet.
Re-spray pan and cook mushrooms and onions until soft.
Add apricot halves, chicken broth, nutmeg and chicken breasts and simmer 6-8 minutes.
Mix cornstarch and brandy and add to mixture.
Serve over noodles.
