Apricot Chicken
Apricot Chicken is an moderately easy dinner. Made with 2 lb. boned chicken breasts, 1 tbsp. lemon juice, 1 c. dry marsala wine, oregano and 17 oz. can apricots, drained, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Pound chicken breasts and put in baking dish.
PurΓ©e apricots in blender and add lemon juice.
Pour mixture evenly over chicken. Sprinkle with oregano and garlic powder.
Heat Marsala and butter in saucepan until butter is melted.
Pour over chicken.
Place under broiler approximately 30 minutes until glaze is brown. Serve with rice or rice pilaf and green veggie.
