Apricot Brazil Nut Melts
Apricot Brazil Nut Melts is an moderately easy dinner. Made with 3/4 c. butter, 1/2 c. sugar, 1 egg, 1 1/2 tsp. vanilla and 2 c. flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cream the butter and sugar.
Add egg and vanilla; cream until fluffy.
Blend in flour and salt.
Add nuts and mix well.
Shape into walnut size balls.
Place on ungreased baking sheet about 2 inches apart.
Flatten with bottom of glass that has been dipped into flour.
Make indentation in center of cookie.
Bake in hot oven (375Β°) for about 4 minutes.
Remove from oven; press center again.
Fill with a little apricot jam and return to oven for another 4 to 6 minutes, until edges are light golden.
Cool on rack.
Decorate each cookie with 3 slices of Brazil nuts, arranged spoke fashion.
In center, place pieces of red and green cherries. Makes 4 to 5 dozen cookies.
