Apricot Banana Nut Bread
Apricot Banana Nut Bread is an moderately easy dinner. Made with 2/3 c. shortening, 1 c. sugar, 2 eggs, 4 to 5 medium ripe bananas and 1/2 c. dried apricots, chopped and dredged in small amount of flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cream shortening and sugar in a large mixer bowl.
Beat in eggs, one at a time.
Blend in lemon juice.
Mash bananas with fork; mix in.
Add dry ingredients; blend.
Stir in nuts and apricots.
Pour batter into a 9 x 5-inch loaf pan, well-greased. Bake at 325Β° for 70 to 80 minutes, or until loaf tests done. Makes 1 loaf.
