Antipasto Rice Salad
Antipasto Rice Salad is an moderately easy dinner. Made with 2 c. cooked uncle ben's converted rice, 1/2 c. diced low-fat american cheese, 1 small can sliced black olives, 1 c. chopped tomatoes and 1/2 c. lite italian dressing, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cool the cooked rice (may be cooked the day before and put in the refrigerator).
Add the Italian dressing, diced ham and turkey, cheese, pepper, onion, black olives and peas.
Chill 1/2 hour.
Add the chopped tomatoes.
