In a 4-quart saucepan, combine onion, garlic and parsley; saute in olive oil for 2 or 3 minutes.

Do not brown.

Add tomatoes, paste, water, sugar, basil leaves, salt and pepper. Bring to a slow boil, then lower heat and simmer for 1/2 hour over low heat.

Makes 3 quarts.

May be frozen in plastic containers.
