Anita's Hot Chicken Salad
Anita'S Hot Chicken Salad is an moderately easy dinner. Made with 1 c. diced cooked chicken, 1 c. cooked rice, 1 can cream of chicken soup, 2 hard-boiled eggs, chopped and 1 small onion, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook chicken, rice and eggs.
Dice chicken and combine in a bowl with all other ingredients, except for crackers.
Mix well and add salt and pepper to taste.
Spread mixture into an 8 x 8-inch pan.
Crush Ritz crackers and cover mixture.
Pour 1/2 stick butter or margarine over crackers.
Bake at 350Β° for 30 minutes.
Cut into squares and serve on lettuce leaves.
