Ambrosia Spring Salad Mold
Ambrosia Spring Salad Mold is an moderately easy dinner. Made with 1 (8 oz.) can crushed pineapple (undrained), 2 c. boiling water, 1 (11 oz.) can mandarin orange segments, drained, 1 3/4 c. thawed cool whip and 1 large pkg. orange jello or 2 (4 oz. serving) pkg., this recipe delivers authentic, satisfying flavors. Take mandarin orange juice and add cold water to juice to make 1 cup.
Stir boiling water into gelatin in a large bowl.
Stir 2 minutes or until completely dissolved.
Stir in measured liquid and refrigerate 1 1/4 hours until slightly thickened.
Stir in whipped topping with wire whip until smooth.
Refrigerate 10 minutes or until mixture will mound.
Stir in fruit and coconut. Spoon into 6-cup mold.
Refrigerate 3 hours or until firm.
Unmold on a large plate.
