Ambrosia Salad
Ambrosia Salad is an moderately easy dinner. Made with 1 (8 oz.) crushed pineapple, drain and save juice, 2 c. boiling water, 2 pkg. orange jello (3 oz. size), 1 3/4 c. cool whip and 1 (11 oz.) can mandarin orange segments, drained, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Drain pineapple and reserve juice. Add cold water to make 1 cup.
In a large bowl, add boiling water to jello.
Stir until dissolved.
Stir in 1 cup juice and water.
Refrigerate until slightly thickened. Stir in Cool Whip with a wire whisk until smooth. Refrigerate until mixture starts to set up.
Stir in oranges, pineapple, marshmallows and coconut. Spoon into a 6-cup mold. Refrigerate 2 hours.
Unmold.
