Akara(Fried Bean Cakes)
Akara(Fried Bean Cakes) is an easy dinner. Made with 6 oz. black-eyed peas, 1 medium onion, salt and pepper to taste and vegetable or palm oil, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Soak peas in cold water for a few minutes.
Dehusk peas by grating in a blender for a few seconds.
Add water and peas to a large bowl; drain water and black-eyes.
Repeat several times until black-eyes and husks are removed.
Blend the peas until very fine. The mixture should be thick.
Finely chop onion and add to the blended peas.
Add salt and pepper to taste.
Mix thoroughly.
Heat oil and, using a spoon, scoop small portions into the oil and deep fry until golden brown.
Serve with custard, cereals or Quaker oats for breakfast.
It can also be served as an entrΓ©e for dinner or eaten as a snack.
