Acorn Stuffed Squash
Acorn Stuffed Squash is an moderately easy dinner. Made with 3 medium acorn squash, 1/2 c. minced onion, 3 tbsp. butter, 1/2 c. chopped walnuts and 2 c. cooked brown rice, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Halve squash lengthwise and remove strings and seeds.
Bake, covered with foil, until tender, about 25 minutes in a 375° oven. Scoop out flesh, leaving about 1/4-inch shell.
Mash squash well. Saute onion in butter until soft and mix with squash, walnuts, rice, eggs and seasonings.
Heap squash mixture into shells and bake 10 to 15 minutes in a 350° oven.
Top with cheese in the last few minutes.
Serves 6.
