7 Layer Casserole
7 Layer Casserole is an moderately easy dinner. Made with 1 c. uncooked rice or cut up potatoes, 1 c. canned whole kernel corn, drained, salt and pepper, 2 cans tomato sauce and 1/2 c. each: finely chopped onion and green pepper, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In a 2-quart baking dish with tight lid, place rice or potatoes in layer and corn in layer; sprinkle with salt and pepper.
Pour 1 can tomato sauce and 1/2 cup water over top. Place onion and green pepper in layer.
Pat out ground beef like a pie crust to fit on top of casserole.
Sprinkle with salt and pepper.
Pour on second can of tomato sauce and 1/4 cup water. Cover with strips of bacon cut in half.
Cover and bake at 350Β° for 1 hour.
Uncover and bake about 30 minutes longer, until bacon is crisp.
Makes 4 to 6 servings.
