Zucchini with Rice
Zucchini With Rice is an moderately easy dinner. Made with 2 medium zucchini, 1/2 onion, chopped, 1 tbsp. margarine, 3/4 c. cottage cheese, drained and 3/4 c. cooked rice, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Saute onion in margarine.
Cook zucchini in boiling water 5 minutes.
Cut lengthwise.
Scoop out centers and dice.
Add to the diced zucchini the other ingredients, all except the cheese. Lightly salt the zucchini shells.
Fill shells with zucchini mixture.
Place in greased baking dish.
Cover with foil.
Bake at 350Β° about 25 minutes.
Remove from oven.
Uncover.
Sprinkle with cheese.
Return to oven for 5 to 10 minutes, until cheese melts.
