Zucchini Rounds
Zucchini Rounds is an moderately easy dinner. Made with 1/3 c. bisquick, 1/4 c. grated parmesan cheese, 1/8 tsp. pepper, 2 slightly beaten eggs and 2 c. shredded, unpared zucchini, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In mixing bowl, stir together the Bisquick, cheese and pepper. Stir in beaten eggs just until mixture is moistened.
Fold in zucchini.
In a 10-inch skillet, melt margarine over medium heat. Using about 2 tablespoons of mixture for each round, cook 4 rounds at a time about 2 to 3 minutes on each side or until brown.
Keep warm while cooking remaining rounds.
Makes about 12 rounds.
