Zucchini Relish
Zucchini Relish is an impressive dinner. Made with 10 c. zucchini, ground, 4 large onions, ground, 4 large green peppers, ground, 4 large red peppers, ground and 2 1/2 c. cider vinegar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Put zucchini, onions, carrots and peppers through food grinder using medium blade.
Sprinkle with salt.
Let stand overnight (I let stand about 3 to 4 hours).
In morning, drain and rinse well with cold water.
Mix together the remaining ingredients.
Bring to boil in a large kettle.
Add the ground vegetables, then simmer for 30 minutes.
Ladle into hot jars. Makes 7 pints.
