Zucchini Provencale
Zucchini Provencale is an moderately easy dinner. Made with 1 medium onion, sliced, 1 clove garlic, minced, 1/4 c. salad oil, 2 lb. sliced zucchini squash and 4 cut up tomatoes, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In skillet saute, onion and garlic in oil.
Add zucchini squash, tomatoes, green pepper and salt and pepper to taste. Cook until tender.
