Zucchini Pie
Zucchini Pie is an moderately easy dinner. Made with 1 c. cooked zucchini, drained well, 1 c. evaporated milk, 2 1/2 tbsp. melted butter, 2 eggs and 1 c. sugar, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Blend zucchini until you have 1 cup.
Add everything else into blender.
Blend well and pour into unbaked pie shell.
Bake at 450° for 15 minutes, then sprinkle nutmeg or cinnamon on top. Decrease heat to 350°.
Bake until nice and brown and a toothpick comes out clean (about 25 minutes).
