Zucchini Pie
Zucchini Pie is an moderately easy dinner. Made with zucchini, 1 1/4 c. sugar, 1 1/2 tsp. cinnamon, 1 1/2 tsp. cream of tartar and dash of nutmeg, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Use big zucchini, but still tender enough so you can pierce the skin easily with your thumbnail.
Peel, cut into quarters lengthwise, remove the seeds and slice crosswise.
Add zucchini to remaining ingredients after they are tossed together.
Mix well. (It may be runny.)
Dump into a 9-inch pie crust and bake 40 minutes at 400Β° or until golden brown.
