Zucchini Pickles
Zucchini Pickles is an moderately easy dinner. Made with 2 lb. zucchini, cut into 1/2-inch pieces, 1/4 c. pickling salt, 6 c. water, 1 pkg. frozen onions, thawed and 3 c. cider vinegar, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

In bowl, combine zucchini, salt and water.
Cover and let stand for 2 hours.
Drain and rinse well.
Combine all ingredients in large pan.
Bring to boil, stirring.
Boil 5 minutes, stirring. Fill hot jars, leaving 1/2-inch space.
Pour hot vinegar mixture over zucchini.
Adjust lids.
Process in boiling water bath 15 minutes.
Yields 4 to 5 pints.
