Zucchini Parmesan

Made with 2 lb. zucchini, 1 egg, well beaten, 1 envelope shake 'n bake coating for chicken (original), 1/4 lb. mozzarella cheese, shredded and 1 can tomato sauce, this recipe delivers authentic, satisfying flavors. Cut zucchini lengthwise, then crosswise into quarters.
Dip pieces into egg, next into Shake 'n Bake mix.
Arrange in greased 9 x 13-inch pan, single layer of zucchini.
Bake at 400Β° for 20 minutes or until tender.
Top with Mozzarella cheese, then tomato sauce.
Sprinkle with Parmesan and oregano mixture.
Bake 10 minutes longer.
