Zucchini Nut Bread
Zucchini Nut Bread is an moderately easy dinner. Made with 3 eggs, 2 c. sugar, 2 c. raw, peeled and grated zucchini, drained, 1 tbsp. baking powder and 1/4 tsp. soda, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Beat eggs until foamy.
Add oil, sugar and vanilla.
Mix well. Stir in grated zucchini.
Sift remaining dry ingredients and add to egg mixture, stirring well.
Fold in nuts.
Pour into two greased loaf pans and bake at 325Β° for 1 hour.
