Zucchini Jam
Zucchini Jam is an moderately easy dinner you can prepare in about 1 hour 14 minutes. Made with c. peeled and grated zucchini, small can crushed pineapple (undrained), c. lemon juice, c. sugar and small pkg. apricot or peach jello, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Boil zucchini for 6 minutes.
Drain.
Add pineapple, lemon juice and sugar.
Stir and boil for 10 minutes.
Add jello.
Stir well.
Place in jars and refrigerate.
Makes 4 1/2 jars.
