Zucchini Italian Style
Zucchini Italian Style is an moderately easy dinner. Made with 2 c. diced zucchini, 1 c. chopped onion, 1 1/2 tsp. minced garlic, 1/2 tsp. salt and 1/2 tsp. dried basil, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In skillet, cook vegetables and spices in olive oil for 8 minutes over medium heat.
Stir frequently until zucchini is tender.
Remove from heat.
Remove 1 1/2 cups of mixture from skillet and set aside.
Stir cottage cheese into remaining zucchini in skillet.
Spread half of tomato purée in bottom of 2-quart baking dish.
Heap zucchini-cheese mixture in center.
Top with remaining tomato purée and sprinkle with Parmesan cheese. Sprinkle reserved zucchini mixture around edge of dish.
Bake 20 minutes at 375°.
