Zucchini Fruit Bread
Zucchini Fruit Bread is an moderately easy dinner. Made with 2 c. sugar, 2 c. grated zucchini, 1 c. vegetable oil, 3 c. unsifted flour and 3 eggs, beaten, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Lightly mix sugar, zucchini and oil.
Add eggs; mix well. Combine flour, soda, nutmeg, cinnamon and baking powder. Gradually add to egg mixture, blending thoroughly.
Stir in pecans, raisins and pineapple.
Pour into two 9 x 5 x 3-inch greased and floured loaf pans.
Preheat oven to 350Β°.
Bake for 50 minutes, or until done.
