Zucchini Freezer Jam
Zucchini Freezer Jam is an easy dinner. Made with 6 c. zucchini, peeled, grated and seeded, 6 c. sugar, 1 large can crushed pineapple with juice, 1 tbsp. lemon juice and 1 big box apricot jell-o, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Place zucchini in a pan with a very small amount of water. Cook 6 minutes.
Remove from heat and add sugar, pineapples and juice and lemon juice.
Place back on heat and bring to a boil for 6 minutes.
Remove from heat and stir in apricot Jell-O.
Stir until dissolved.
Put in freezer containers and seal.
Let set one day and store in freezer.
