Zucchini Cookies
Zucchini Cookies is an moderately easy dinner. Made with 2 c. zucchini, shredded, 4 c. flour, 2 tsp. baking powder, 1 tsp. salt and 3 sticks (12 oz.) margarine, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cream sugar and margarine until light and fluffy.
Add eggs and lemon peel.
Beat until smooth.
Sift together flour, baking powder and salt.
Add to sugar mixture.
Add zucchini and nuts.
Drop by teaspoonful on cookie sheet.
Bake 15 minutes at 375Β°.
May frost with confectioners sugar drizzle frosting, but they are good just plain.
