Zucchini Casserole No. 2
Zucchini Casserole No. 2 is an moderately easy dinner. Made with 3 large zucchini, 2 eggs, 1 c. mayonnaise or salad dressing, 1 medium onion, chopped and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Slice and cook zucchini in 2 cups water for 5 minutes. Drain. While zucchini drains, beat eggs until foamy in large bowl. Stir in mayonnaise, chopped onion and salt.
Add cheese until well blended.
Shallow casserole. Sprinkle with crumbs.
More small pieces of butter or margarine.
A 350Β° oven for 30 minutes or until golden brown.
